Delicious Gluten Free Waffle Recipe

I LOVE  these gluten-free waffles! 



It is hard to describe the joy of eating these waffles.

 It has been 3-4 years since I have figured out that I have a wheat sensitivity. So many wheat-free items just taste like cardboard! I also have a problem with yeast so that even makes it harder to find good things to eat. Oh, by good things I don't mean fish and veggies. That isn't hard to find. I mean a gooey cinnamon roll, soft light and airy sandwich bread, pizza and crusty french bread with lots of butter. 

And the ingredients are so expensive that it makes it hard to experiment. I try and eat it no matter how bad it turns out. So when I find a winner I want to share it with everyone!!! At least to my wheat sensitive friends. 

I mixed up the dry ingredients and kept it in a ziplock bag to have as a quick mix. Gluten-free flours can be so messy, especially tapioca starch! 

The batter needs to rest for at least one hour before cooking. I think it makes it so simple. It gives me time to clean up and I don't feel rushed to get them on the griddle before they go flat. They don't go flat. They are wonderful! The recipe even suggests to let the mix rest over night. I haven't done that. 

So let me know what you think of these! Or better yet, maybe you should come over and we will have a waffle party with lots of butter and syrup. We will eat them hot off the griddle. I will even let you have the first one! mmmm....

Gluten-free Waffles

Dry: 
1/4 c. tapioca starch
1/2 c. sorghum flour
1/2 c. gf oat flour (i buy Bob's at Kroger and put them in the blender to make flour)
1/3 c. teff (i didn't have any so i used quinoa flour or brown rice flour)
2 t. xantham gum (i tried 1 1/2 t. and it worked fine too)
1/2 t. guar gum
1 T. baking powder
1 t. salt ( when using buttermilk omit the salt or it is too salty)
3 T. sugar
a sprinkle of cinnamon 
(if you omit the xantham gum or guar gum and expect the same results)

Wet:
1c. milk (or buttermilk, or try vegan milks and see what happens)
2 eggs
1 t. vanilla
4 T. melted butter

combine and let stand at least one hour before cooking.
